Functions of F&B operations


Food and beverage maintain the hospitality operation of work and ensure that guests receive high quality of food and beverage service no matter inside or outside of the hotel. In general, F&B functions can include breakfast, lunch, dinner, theme events, receptions and cocktail parties and refreshment breaks.

The staff of the food and beverage departments plays multiple dining-related roles such as bartender, cook, chef and dining room server. The department is sometimes working in a group which may come from different shops and departments that are united in providing a single or consistent dining experience within an organization.

There are some major functions of F&B.
1) Supplying foods on the guest in the hotel
2) Providing food and drinks such as the bar, restaurant and room service
3) Optimizing the supply chain and the use of raw materials














Bars

Bar is a retail business that mainly serves beverage mostly alcoholic drinks such as wine, beer, cocktail and liquor.


Bar promotion

Nowadays, bars mostly promote their business by social media such as Facebook and their own website. This promotion not only can save lots of promotion cost but also can have an unexpected outcome and result. Guest may only need to like their Facebook page then can get discount and no charge on the entrance fee. Also, sometimes if the guests give the bar the guest name before going there may can also get discount.


Employee presentation

Bartenders and staff must have clean and ironed clothing with a presentable appearance. And lotion and deodorants must be unscented since those scents can disturb and interfere with customer’s appreciation of the food and drink. Also, employees must be warm and polite to every customer with smile. And employees should be able to listen, communicate and entertain customer. Most important is employees must have the standards of choosing wine so that they can recommend different wine to customers.


Special events

Now, many bars not only have the function of drinking but also have many special event by advertising and promoting their business such as live music and celebrity mini concert or show. It can generate more profit and popularity quickly and less costly.

1. Train your staff.

Even if bartenders and servers have tons of experience and come highly recommended, it is important to train them in the particular ways. If your customers expect a certain kind and quality of service, you want to make sure your staff can give it to them.

2. Watch for theft.

It is possible that employees steal things from bar, but it can and does happen occasionally. It is important to be vigilant. Owners do not need to be suspicious of every employee, but keep an eye out for common tactics that thieves use. Regular shortages and a lot of free drinks can be signals that a bartender may be stealing from you.

3. Know what’s going on behind the bar.

Managers should spend time behind the bar. They can pick up a shift or two a week. They can make sure everything’s in order, keep an eye on employees, and get customers’ opinions on how things are going.

4. Keep things organized.

As a manager, mostly give cleaning and organizing tasks to employees. But, it’s still ultimately managers’ responsibility to make sure everything’s organized as well as it can be to keep bar running smoothly. Check out the stock behind bar, the kitchen, and even the supply closets.

5. Keep equipment up-to-date.

It is hurting the bar if managers make employees rely on outdated, barely-working machines. Try looking at used equipment stores or waiting for sales to get what is needed.

7. Establish a relationship with suppliers.

They’re the ones who can cut your deals and special things. Beer and liquor suppliers can also get you branded merchandise like napkins, coasters, etc., which means that you don’t have to pay for them.

8. Change it up.

Change out beer and drink offerings every few months to make room for seasonal beers and new cocktails. This will keep the bar from becoming stale.

9. Know when to cut someone off.

One of the most important things a bar manager can do is make sure that everyone on your staff both knows how to recognize a customer who’s had too much to drink and knows how to cut the customer off. If they drink too much, fight and chaos may happen. The safety of customers should always be the biggest concern, not just because caring customers but staying on the right side of the law.

Recent trends and challenge in operating F&B operations

Trends:
  • Focus on value
With the obvious decline in all sectors of disposable INCOMES, that is the amount of money we have in our pockets at the end of the day once the cost of living is removed, a real focus on value has been the most significant change. Intangible items that represent decadence are on the decline, the death bell for white-gloved fine dining has been rung and guests are looking for authenticity and upscale elegance that represents real bang for their buck.
  • Rise of gourmet fast food
On that point the rise of high end or gourmet fast food establishment and the transformation of traditional take away or PAPER BAG meals to sit down dining experiences with proper tableware and alcoholic beverage crystallizes this paradigm shift. Truffle essence burgers with a cold imported beer and a knife and fork to enjoy it with was unheard of 10 years ago as was the duck and foie gras hot dogs. Taste sensations without the sensationally high price tags!
  • Healthy cuisine
Another trend that has been building in many countries across the globe and will soon hit Asia with heavy impact is the Healthy Choice sector of diners that choose a lifestyle of healthy cuisine choices, environmental factors, sustainability and super-foods. This sector ranges from health conscious consumers with an increased focus on additives, allergies and dietary requirements to companies and suppliers looking to monitor and market reducedCARBON FOOTPRINTS and environmental consciousness. The sector can include weekend warriors, hybrid car drivers, concerned parents and go as far as dedicated vegans. The main point here is that this sector is growing in market presence and therefore restaurant impact.
  • Quality beverage
The final trend we are seeing is the focus on quality applied to beverage items – higher quality wines rather than bulk cheaper wines, SPECIALTY COFFEEand tea service rather than traditional items / service and again the upgrading / gourmification of every day beverage items such as coffee.


Challenge

The best service any hotel can offer is the ability to serve guests high quality food in their hotel room in a timely manner with excellent service.Most often, unless in some exclusive luxury brands with a signature chef and restaurant (they are smart to have required separate kitchens when designed) the food for private dining comes from the same line as the equally diverse restaurant menu. This is the mark of a good chef, you are only as good as your Private Dining food. Anything you do, the legacy of this menu and deliverance will mark your success.

Three areas of Private Dining Culture we can comprehensively improve:
1. Cook
It is a verb, chef is an attitude, a goal, a direction, a purpose. The youngest and greenest cooks know that ‘chefs’ do not cook room service food. False, we didn’t get this job until we embraced Private Dining. It is the toughest challenge to make that Caesar salad or burger be the best the guest has ever had inside a room with four walls in a city rarely visited.

2. Service
We as leaders must take great pride in them just as we do our food, we cannot forget them or give them any less compassion than anyone else. They must be fluent in the glossary of food terms and ingredients, ready to have a conversation about the recipe and technique of preparation, or at the minimal some fluffing of the chefs ego. There are some people who have challenges with a hospitable, professional conversation with the guest. Voice patterns of a professional in hospitality will make the guest secure and confident about their choice of hotel or resort.

3. Expectations of the Guest
Arrives to destination, maybe without any hassle at the airport or with family members. Some people just want to eat when they stop moving for the day. Look at how popular dinner is at home or restaurants. Food brings closure to those that travel, and closure to the day, hence the pedestrian items on the menu. We appeal to all those who want comfort food. It will bring me great pleasure to finally remove Cobb/Caesar salads, club sandwiches and crispy chicken strips from all private dining menus. We need the guest to expect more.

Disney will educate the market as to the theme park product, the quality of the theme park experience, and the value of the pay-one-price admission for a day of quality entertainment.

Disney will provide price leadership in the market. This will allow others to price up to Disney levels.

EuroDisney will create marketing awareness. Disney’s well established and creative marketing programs will create awareness in the market and also enlighten competitors relative to the use of effective marketing techniques

Fast-Pass, a device that assigns people a voucher with set boarding times for attractions. Because the times are strategically assigned, visitors spend less time in lines and more time having fun on rides. Waiting times can be cut by almost 40 minutes for some rides.

There are several major Theme Park Companies being established in China. As these companies gain experience and scale, a comprehensive theme park industry will be created. Such as Chimelong and Fantawild Adventure

Changing demands for club service: members are looking for familycentered opportunities to learn, connect, have outdoor adventure, enjoy healthy experiences and interaction with diverse groups

Fitness activities

Since more and more people pay attention to health and stay in shape, so there increasing needs for fitness center or club. For The non-commercial recreation there are some park and stadium gym and for commercial recreation mostly are some sport club and gym. Also, in the fitness club, there always have some fitness trainer to help and give useful advice to the people. Therefore, for the fitness recreation, there is a trend for the increasing professional coach and trainer.
 

Tourist purpose

Many recreations now develop for tourism purpose in order to stimulate the economy. Commercial recreation start not only seeks profit from the local but the foreign people. For theme park, Disney mainly opens to attract more travelers to visit Hong Kong since most of the people visits Disney are mainlander. Also, Ngong Ping 360 is open to introduce the landscape to the visitor since the Lantau Island big Buddha is no longer attractive enough.

Outdoor recreation

Many teenagers now love to have outdoor activities in order to stay close to the nature environment and mostly because they like taking photos. So, there are a increasing needs for outdoor recreation. In Hong Kong, outside the Disneyland there is an Inspiration Lake Recreation Centre which is free for public to go in there to spend a day. People can have picnic and ride bicycle or Lake Bicycle. Also, recently, in Lantau island, it has a new commercial recreation – car camping. This activity is very popular in the western country which people will park a car in the grasslands then spend a night in it. Inside the car it has bed, toilet and kitchen

Explore different types of clubs and briefly described their functions

Social Club 

A social club means that a myriad of people have gathering at a place where usually formed around a common interest and activity for the purpose of pleasure or socializing. There have different types of social club. The social club members should have the same goal toward recreation, joy and non making money purpose.
There have different types of social club. One of the example is Gentlemen’s Clubs. It was designed where men can relax and build up friendship with other men. Men could socialise, drink, dine and relax together.

A service club offer fraternal socialising, free of political opinions and religious beliefs and add a focus on community service. It is a nearly type of chairty group which members sometimes will rasie money for the chairtable works. Hobby Club

Hobby Club is for those who have the same interest and enjoyment, for instance, collecting stamps, painting, art and so on. It focuses on joining people together to share information for their interest rather than commercial purpose.

Cartoonmad is an example of hobby club. It gathers people who love comics. After register their website, members can enjoy different comic online. It also has a forum in the website so that member can share their opinion and experience of reading a comic.
 


Athletic Club

Athletic Clubs is a kind of private club which provides different sports facilities to members. Members need to pay fees for the membership so that they can enjoy the facilities like swimming pool, tennis count, boxing and so on.

For example, Hong Kong Amateur Athletic Association is a large athletic club in Hong Kong.  It is aiming at promoting sport, including road race cross-country etc. It will offer a development spectrum for athletes and sometimes select them to participate in Olympic Games, Asia Games or other sport competition.

Members are being charged below one hundred dollar to become one of the members. And then they can have different training or practice.

Commercial recreation

Commercial recreation, this definition offers two key points. First, “recreation-related” may be interpreted very broadly and may include any product or service that either directly or indirectly supports a leisure pursuit. This interpretation means that leisure-related aspects of the travel and hospitality industries (including hotels and restaurants) can be included within the broad framework of commercial recreation. Of course, a significant part of both the travel and hospitality industries serves the business traveler, and much of the restaurant industry (part of the hospitality industry) serves a fundamental nutrition purpose. However, it must be recognized that there is an extremely large leisure component of these industries.


The second key point is that the “long-term intent” is to be profitable. This recognizes the fact that commercial recreation is not always profitable; it may fail. It may also take a company many years to become profitable, because it may have to overcome very high start-up costs. Some companies may never be profitable on a day-to-day operational basis, but may yield large profits through the long-term appreciation of their land and facilities.

Hong Kong Disneyland 
Hong Kong Disneyland is located on reclaimed land in Penny's Bay, Lantau Island. It is the first theme park located inside the Hong Kong Disneyland Resort and is owned and managed by the Hong Kong International Theme Parks. It is, together with Ocean Park Hong Kong, one of the two large theme parks in Hong Kong.
The park consists of seven themed areas: Main Street, U.S.A., Fantasyland, Adventureland, Tomorrowland, Grizzly Gulch, Mystic Point, and Toy Story Land.The theme park's cast members speak in Cantonese, English, and Mandarin. Guide maps are printed in traditional and simplified Chinese as well as English and Japanese.
Hong Kong Disneyland currently occupies 49.9 hectares (123 acres)  7.92 million to 8.92 million visitors annually. The park capacity will increase to handle up to 10 million visitors annually over a 15-year expansion period.




 Ocean Park Hong Kong



Ocean Park Hong Kong, commonly known as Ocean Park, is a marine mammal park, oceanarium, animal theme parkand amusement park, situated in Wong Chuk Hang and Nam Long Shan in the Southern District of Hong Kong. It is, together with Hong Kong Disneyland, one of the two large theme parks in Hong Kong.


The attractions of Ocean Park consists of  The Waterfront  and The Summit. For the Waterfront which has  Aqua City , Amazing Asian Animals and Whiskers Harbour . For The Summit, it consists of Marine World ,Thrill Mountain ,Adventure Land ,Polar Adventure and The Rainforest .

Ocean Park received 7.45 million visitors in 2013, awarding it the position of the world's 12th most visited theme park, and the largest Theme Park in all of Asia followed behind by Hong Kong Disneyland.

Vacation ownership of hotel business, Agreements of franchising, Management contract

1. Agreement of Franchising:
Franchising is a legal contract built between franchiser and franchisee. The contract can be as long as several years. When the contract is ended, both franchisers and franchisees can choose renew or not based on the performance.


For Franchiser, they are the owners of a brand name/product. They have the right to allow franchisee to use their brand name to run a business. In order to attract more franchisees to invest money and build up confidence, they are working hard to build up and maintain the reputation of the brand. When franchisees are cooperated with them, they will provide assistance to franchisees based on centralized reservation system.
Franchisers most likely, have a clear company policies and standard for franchisee so that franchisees will have a unite service provided to customers.


For Franchisees, they are the business partners with franchisers. They invest to the brand, and get the right to run the system.



Examples of Agreements of franchising:

Days Inn China was established in 2004 and is one of the fastest growing hotel chains in China today. The franchise of Days Inn China is Frontier Group which is a frontier group in Singapore,

Hilton Hotels & Resorts was established in 1943 and over 530 Hilton branded hotels across the world in 78 countries. The franchise of Hilton Hotels & Resorts is Hilton Worldwide.

Renaissance Hotels was founded in 1982. The franchise of Renaissance Hotels is Marriott International which is an American diversified hospitality company.

2. Agreement of Management Contract
Management Contract is a term signed between owners and Management Company. It allows the hotel company to manage the property for a period like, 5 or 10, or even longer years.
For the management company fee, the management company will usually receive a percent of gross/net profit (around 3-4.5%).


For the owner, they are responsible to financial planning, paying for the initial fee, for instance, set up charge, marketing charge and accounting charge and so on. Apparently, they are the key point to set a clear position to for the business.

For the management company, they are responsible of running the company. For example, managing all of department in company, recruiting people, training employees, and managing the finance.

On the other hand, owners are responsible of paying money, and management companies are responsible of running the company well.

Accor signed management agreement with Novotel Hyderbad iHyderbad, India.

It is a kind of timeshare ownership, which means that when customers pay for a period of time, then they can have the right to use the property that company provided at that period of time.
